Tasty Tuesday: Little Cheddar Meatloaves

This is our absolute favorite meat loaf recipe. It is incredibly flavorful and moist and we also like the fact that we can each have our own little meatloaf. I shaping the meatloaf into 8 small loaves also allows the sauce to flavor the meat better than normal meatloaf recipes do. This recipe also freezes well.
Little Cheddar Meat Loaves
1 egg
3/4 c. milk
4 oz. cheddar cheese, shredded
1/2 c. oatmeal
1/2 c. chopped onion
1 tsp. salt
1 lb. ground beef
2/3 c. ketchup
1/2 c. packed brown sugar
1 1/2 tsp. mustard

Beat egg and milk; stir in cheese, oatmeal, onion and salt. Add beef and mix well. Shape into 8 loaves and place in greased 9 x 13 baking dish. Combine ketchup, brown sugar and mustard. Spoon over loaves. Bake uncovered at 350 degrees for 45 minutes.
Yield: 8 servings
