Tasty Tuesday: Dill Bread

A friend introduced me to this recipe about a year ago when we were planning a meal for a camping weekend. I was talking of making some kind of bread and she suggested this one. I have always really liked dill, so I gave it a try and loved it!

The dill flavor is subtle but definitely "there". And because of the cottage cheese, the bread has a nice moist texture and flavor. We especially like this bread warm or used for toasted sandwiches because that is when the dill flavor is the most noticeable. While making this dill bread might take a bit longer to make than normal bread, it is still simple to make and oh so delicious!

Dill Bread
1/2 c. warm water
2 tbsp. yeast
1 tbsp. sugar
2 c. cottage cheese
2 eggs, beaten
2 tbsp. sugar
2 tbsp. oil
2 tsp. salt
4 tsp. dry dill weed
2 tbsp. dried minced onion
1/2 tsp. baking soda
4 1/2 c. flour

Combine first 3 ingredients; stir until dissolved. Set aside

Heat cottage cheese until lukewarm, add eggs and mix well. Then add the sugar, oil, salt, dill weed, minced onion, and baking soda. Once mixed, add yeast mixture.

With electric mixer, beat in 2 1/4 c. flour. Once mixed, stir in another 2 1/4 c. flour with a heavy spoon.

Cover and let rise in bowl until double in size, about 1 hour. Stir down and turn into 2 well greased 1 1/2 qt. casserole dishes for round loaves or 2 9x5 pans. Spread 1 tsp. oil over top of each loaf smoothing out roughness. Let rise until double again. Place on lower rack in 350 degree oven and bake approximately 40 min. Brush tops with butter while hot.

Yield: 2 loaves

MY NOTES: I have a Bosch mixer with a dough hook- I kneaded the dough using that exclusively, just making sure not to over-knead it. These also make excellent rolls.

Gone Again!

Just letting you know that I am gone once again, this time to a cousin's wedding! It seems we have a lot of weekends away the last month and next month is more of the same.

As usual, if I can, I will post while I am gone, but I don't know if we will have internet connection or not.

How to Freeze Cheese

As I've been perusing blogs lately, I've seen a lot people asking whether or not you can freeze blocks of cheese. So far, I've not seen a good answer. It seems most people don't think you can unless you are going to use it to shred it later.

Well, my mother-in-law taught me how to freeze cheese in such a way that it is good to eat later. What usually happens to cheese that is frozen is that it gets crumbly, which makes in not so nice for simply eating. But if you follow the instructions below, you should have cheese that is not crumbly and very good to eat even after being frozen.

1. Wrap cheese in plastic wrap- make sure to cover well. I often do a double layer.
2. Next wrap in tin foil.
3. Then put in a plastic bag and seal well.
4. Freeze
5. When ready to use, remove from freezer and place on counter for 24 hours or until soft. Generally it doesn't take that long for me. It is soft when it is sort of flexible.

It is very important to not unwrap the cheese until it is "soft". That is what seems to help it not get crumbly. Also, I have found that Muenster and other softer cheeses still don't have a good texture but cheddar and other harder cheeses work fine.

Remember how I wrote here on how you can save on postage? Well, I just had to tell you that on Friday I got the sweetest deal on e-bay! I bought eighty $0.42 stamps for only $25, which comes out to $0.31 a stamp. Plus I shopped through Ebates (which I highly recommend if you do any online shopping) and earned 2%, or $0.50 back. Let me tell you I was pretty excited! Now I just need to get some $0.02 stamps so I can use them.

The key to getting these good postage deals is to take your time. I had been watching listings on e-bay for about a week before I saw anything that was worth even taking the time to bid on. It takes a little dedication, but if you stick with it you can really save!

Tasty Tuesday: Homemade Yogurt

After thinking about it for about a year, I finally made my own yogurt. I am so excited! In fact, I nearly broke down and posted this recipe Saturday night when I made it, I was that excited!

I was wanting to try my hand at making homemade yogurt because it is cheaper, more healthy than many commercial yogurts, and just because I like to do that kind of thing. However, it scared me because I knew making yogurt was sort of touchy and also because, well, I just had never done it. Then I found this very easy recipe and decided to give it a whirl and was thrilled with the results. I really liked that I didn't have to buy a yogurt maker, wrap the jars in towels etc. It was all just incredibly simple.

After I made it and was waiting for it to do its thing in the oven, I was so nervous. What if I went to all that work and it didn't turn out? What if it was runny? What if it was just plain gross? My poor husband was nearly tired of hearing about it I think! I was thrilled when I finally was able to taste some after it cooled and discovered that it had turned out wonderfully.

I loved how thick it was. I had added another 1/2 Tbsp. gelatin which made a nice thick yogurt- just the way I like it! I liked the vanilla flavor too, however if you want to add fruit or aren't a huge vanilla yogurt fan, I'd probably skip it or at least cut way back on the amount because it is pretty strong. Overall, I was really pleased. And the crowning glory? My husband, who is a yogurt lover, declaring it perfect.


Homemade Yogurt
2 qt. milk
1/2 c. sugar
1 Tbsp. unflavored gelatin
2 Tbsp. yogurt (plain is best)*
1 Tbsp. vanilla

Dissolve gelatin in 1/3 c. cold water. Heat milk to 190 degrees. Add gelatin, sugar and vanilla. Cool to 130 degrees. Add commercial yogurt and stir well with a wire whisk. Pour into 2 quart jars; screw on lid. Set in oven with light on for 8 to 10 hours. Cool.

Serving suggestions: Stir in fruit, pie filling or dry flavored jello.

*Once you have some homemade yogurt, you can just use that instead of the bought yogurt. I usually buy yogurt maybe every 12 times to use as starter as it does seem that after a while the yogurt just doesn't get quite as good.
