This simple and fast dish is one that we absolutely love, especially with meat loaf. Reminiscent of home fries, I think Crunchy Thyme Potatoes are even yummier. I got the basic recipe from a church cookbook I have and then combined several other recipes and my own ideas to create this recipe.
Crunchy Thyme Potatoes
4 large baking potatoes
1/3 c. butter
1/2 tsp. dried thyme
1/2 to 1 tsp. salt
2 cloves garlic, minced
1 1/2 tsp. paprika
1/2 c. dry bread crumbs
Melt butter in a jelly roll pan in a 375 degree oven.
Add a single layer of potatoes cut lengthwise into 1/4 inch thick slices; turn once in butter.
Mix remaining ingredients and sprinkle over top of potatoes.
Bake at 375 degrees for 30 minutes or until done.
* For variation you can also sprinkle with Parmesan cheese or shredded cheese. This is a very versatile recipe and I have tried different combinations of seasonings and we have enjoyed many variations.

I am so all about this recipe. I have some thyme just waiting to be picked. It's going toward some potatoes. :)
