Tasty Tuesday: Pineapple Rings in Jello

This is a very simple recipe that I like to make when I need something fruit salad-ish and am short on time. It literally takes minutes to make, although it does need several hours refrigeration. This dish adds color to your table and is a hit with everyone, especially the children.

Here's the recipe:

Drain off the juice from pineapple. Dissolve 1/3 c. Jello in 2/3 c. boiling water and pour over pineapple in can.


It will then look like this.


Refrigerate. When completely set, open other end of can and remove, using knife to cut around edge. Slice and serve! (Okay, here's where you can laugh. I fully intended to take a picture of the finished product, but when I went to serve it to our guests, I totally forgot! Sorry!)

1 can sliced pineapple
1/3 c. Jello (cherry, lime or orange)
2/3 c. boiling water

Drain off juice from pineapple. Dissolve Jello in boiling water and pour over pineapple in can. Refrigerate. When completely set, open other end of can and remove, using knife to cut around edge. Slice and serve!
