Tasty Tuesday: Crustless Bacon and Egg Quiche

I've been making this fast, simple dish since soon after we were married three years ago. When I'm in the mood for a quiche, I rarely use any other recipe. One thing that I really like about it is the fact that you don't need to make a crust, but by using the Bisquick, you automatically "get" a crust. This is a dish that we love for brunch or even an occasional dinner.

Crustless Bacon and Egg Quiche
1 1/2 c. milk
1/2 c. Bisquick mix
3 eggs
2 Tbsp. butter, melted
dash pepper
1 c. shredded cheese
cooked bacon, crumbled (about 5 - 6 slices)

In a blender, combine milk, Bisquick, eggs, butter and pepper. Blend for 15 seconds. Pour into a greased 10 inch pie plate. Sprinkle cheese and desired amount of bacon on top. Gently press below surface with a fork. Bake at 350 degrees for 30 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

** I've made this with sausage before too, and it was just as tasty!
