You Know Your a Frugal Mom When...


Your 19 month old son recognizes and gets excited when he sees CVS and Rite Aid! I seriously didn't believe it at first when it seemed my son "recognized" these drugstores, but after several times I realized that yes, he indeed did know these places!

I had to laugh last week when we walked to Rite Aid. As we started walking the block that the store is on, Logan began to run and hollered "Yaaayyy!" as he headed straight for the front doors. Hopefully he'll learn some good spending habits through all his tag along shopping time!

Tasty Tuesday: Frosted Chocolate Chip Cheesecake


We love this rich, creamy cheesecake. And the wonderful thing about it is, it's rather easy to make. Oh yeah, that and the fact that it has a frosting so if the cake cracks no one knows! Seriously though, if you at all like chocolate and cheesecake, you are sure to love this.

Frosted Chocolate Chip Cheesecake
2 c. chocolate wafer crumbs
6 tbsp. butter, melted
3 packages (8 oz. each) cream cheese, softened
1 c. sugar
1 tsp. vanilla
3 eggs, lightly beaten
1 c. (6 oz.) miniature semisweet chocolate chips
1 milk chocolate candy bar (4 oz.), chopped
2 c. whipped topping
1/4 c. sliced almonds, toasted (optional)

In a bowl, combine wafer crumbs and butter. Press onto the bottom and 1 1/2 in. up the sides of a greased 9-in. springform pan. Chill for 15 min. or until set.

In a large mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs; beat on low speed just until combined. Stir in chocolate chips. Pour into crust.

Place pan on a baking sheet. Bake at 325 degrees for 55-60 min. or until center is almost set. Cool on a wire rack for 10 min. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.

For frosting, in a microwave-safe bowl, melt candy bar; stir until smooth. Cool to room temperature. Gradually stir in the whipped topping. Remove sides of springform pan. Frost top of cheesecake; garnish with almonds if desired. Refrigerate leftovers.

Yield: 12 servings

Wow, this was a fun week at Rite Aid! I had nearly and 80% savings from my two trips there and I enjoyed stocking up on baby stuff for nearly nothing. In reality I spent $5.46 on the above purchases, but since I bought the one pack of diapers for a baby gift, $3.46 will actually be taken out of our gifts given budget, not grocery. I will get back $2 in Single Check Rebates, so essentially, in the end I will have paid nothing out of pocket for the items that I bought for us (not as a gift).

Wondering about the big orange ball? Well, my son spotted it about as soon as we walked into the store. I let him play with it while we were shopping and he was having so much fun that I decided to just buy it. I mean, I take him with me on so many shopping trips and he usually does so well he deserves a little treat once in a while. And besides, every little boy needs a ball like this, right? So, $2.24 of this purchase was for the big orange ball.

As part of the Single Check Rebate program, I will actually get back $25 in Single Check Rebates for purchasing these items. So essentially, this was a $16.37 moneymaker, even WITH purchasing the ball.

(Just in case you are doing the math here, my favorite cashier missed a coupon, so she did an after sale coupon for me and gave me the $2 in cash.)

- This one is a little trickier since the coupon is in a banner add. There are several different McCormick Banners and one contains a link for $1 off. It shows up on the right and at the top of the page. Try searching for Bunny Cupcakes and watch for the McCormick ad to load. If it doesn't appear, try searching again. Once it appears, you will need to let the banner fully load to see the link for the coupon. It should be there after the little bunny cupcake hops toward you. Once you print it, hit your browser's back button and you should be able to print it a second time.

Tuesday: Brown Butter Snickerdoodles


These cookies are incredibly delicious! Just ask me how many I ate the day I made them. Actually, you probably don't want to know! It was an embarrassing amount.

I've made Snickerdoodles before and have always kind of liked them. But when I came across this recipe for Brown Butter Snickerdoodles, I was intrigued. Brown butter in a cookie? I had to try them. And let me tell you they were incredibly good. The brown butter adds just a hint of nutty flavor and the cookie turned out delightfully chewy and soft. They were a hit around here and I will definitely be making them again.


Brown Butter Snickerdoodles


Cookie:
1 cup butter
1 1/2 cups granulated sugar
2 large eggs
2 3/4 cups flour, sifted
2 tsp cream of tartar
1 tsp baking soda
1/2 tsp salt

Rolling Mixture:
3/4 cup granulated sugar
2 tsp. ground cinnamon

1. In a small saucepan, melt butter at medium heat. Reduce to simmer and stir until butter turns golden brown. Remove from heat and let cool.

2. In a large bowl, whisk together cooled butter, sugar and eggs.

3. Sift dry ingredients together and stir into wet mixture. Cover bowl and chill dough in refrigerator until firm.

4. Preheat oven to 375 degrees F.

5. Roll dough into small balls (about 1 1/2 Tbsp. of dough per ball). Roll balls in mixture of cinnamon and sugar, and place on ungreased baking sheet.

6. Bake 8-10 minutes until cookies are flattened and crinkly.

Yield: 2 to 3 dozen

Well, it looks like Kmart is now not wanting to honor the $10/$20 coupon that they posted on their website the other day. What a mess!

Since Saturday is my family day I am just going to keep this short and say I am sorry if you had problems using it. I did do some research on it before I posted it because it just seemed too good to be true, but it all lined up. I really do try to only post things that are legitimate and easy to use.

I'd really recommend reading Crystal's post reguarding the whole situation. She expresses my sentiments and thoughts about the whole situation so well.

At any rate, if you do try to use the coupon, just be warned that you might have issues. So use at your own risk! :)

Ask the Readers: Bleached or Unbleached Flour

So, I was at Walmart this week and used my $0.75 Gold Medal flour coupons. I typically buy bleached flour just because, well, that is what my mom always bought and so I do too. However, I noticed that the unbleached flour was the exact same price so I bought it thinking that skipping the bleaching process has got to make the flour healthier and I'm all for anything that is healthier for my family.

But when I got home, I started wondering if I made a bad decision. What if it makes my food, particularly my baked stuff turn out weird? I assume I use the same amount as usual, but am not really certain.

And so, I decided to turn to you all and see if you have any experience or knowledge about the subject. Do you use unbleached flour the same as bleached? Does it make baked things get weird? Any help would be greatly appreciated!
